This exclusive bottling is a blend of the finest barrels of our Cabernet Sauvignon from Beckstoffer To Kalon Vineyard. The famous To Kalon Vineyard is located on the western bench of the Oakville AVA, in the geographic center of Napa Valley. The fabulous 2009 vintage gave us near-textbook conditions throughout the growing season and harvest. We hand harvested the To Kalon grapes and then hand sorted them twice at the winery for optimal quality. This is a powerfully structured, deeply flavored wine, capable of even greater complexity with bottle aging. This wine is worthy of a celebratory candlelight dinner. (And every day is worthy of a celebration!)

Tasting Notes

Combining concentrated flavors with muscular tannins and impeccable balance, the 2009 Beckstoffer To Kalon Vineyard Cabernet Sauvignon is built for the cellar. Yet even in its youth, this wine is approachable, supple and delicious. The seductive aromas and plush flavors are packed with black cherry, cassis and ripe plum character. Nuances of cedar, rhubarb, anise, sage, black olive and loamy earth add to the complexity of this magical expression of the To Kalon Vineyard terroir. The wine’s soft entry and richly structured palate lead to a lengthy, dark-fruit finish that is laced with caramel and maple from new French oak.

Vineyard Notes

To Kalon Vineyard was first planted in 1868 by viticulture pioneer Hamilton W. Crabb. The vineyard’s angle of sun exposure, its mesoclimate and its deep, alluvial-fan soils foster grapes with complex flavors and exquisite balance. Located in the Oakville American Viticultural Area (AVA), it is one of California’s finest sites for Cabernet Sauvignon. Our grapes come from the Beckstoffer Vineyard, a section of To Kalon that is trained to bilateral cordon with vertical shoot positioning. Clusters are positioned for optimum sun exposure to develop fully ripe, lush flavors, which then turn into a myriad of complex fruit, spice and floral notes during winemaking.

Vintage Notes

Although winter and spring rainfall during the 2009 growing season was only about two-thirds of normal, the timing of the rains was excellent for the vines. These vines completed budbreak in early April and developed through a frost-free spring. Ideal conditions prevailed during bloom and berry set in May. Moderate temperatures during summer and early fall produced excellent fruit quality by allowing the grapes to ripen slowly and fully, while maintaining acidity. A fabulous vintage!

Winemaking Notes

We hand sorted the grapes first in the vineyard, as we picked them at dawn, and then again at the winery for optimum quality. We cold soaked the must for gentle extraction and fermented it in stainless steel tanks. Following extended maceration and pressing, the wine completed malolactic fermentation in barrels to round the acidity. Four rackings naturally clarified the wine, as caramel from barrel aging married with the opulent, dark-fruit expression. Bottled without fining.
