This exclusive bottling is a blend of the finest barrels of our Cabernet Sauvignon from Beckstoffer To Kalon Vineyard. The famous To Kalon Vineyard is located on the western bench of the Oakville AVA, in the geographic center of Napa Valley. The cool 2011 vintage gave the wine bright and complex fruit character etched with delicate herbal and graphite notes. We hand harvested the To Kalon grapes and then hand sorted them twice at the winery for optimal quality. This is a powerfully structured, deeply flavored wine, capable of even greater complexity with bottle aging. This wine is worthy of a celebratory candlelight dinner. Our 2011 Beckstoffer To Kalon Cabernet Sauvignon gracefully melds the elegance and vibrancy of Napa Valley’s cool 2011 growing season with the deeply flavored, muscular-structured Cabernet Sauvignon grapes of world-renowned ToKalon Vineyard. Complex notes of forest loam, suede leather, coffee bean and graphite layer the black currant, blackberry and ripe plum aromas. The wine’s intense, dark-fruit flavors explode on the palate and then firm, sculpted tannins carry them through the long, expansive finish by sculpted tannins. Beautifully integrated toasted almond, mocha, caramel and clove notes from new French oak barrels embrace the rich fruit expression.
To Kalon Vineyard was first planted in 1868 by viticulture pioneer Hamilton W. Crabb. The vineyard’s angle of sun exposure, its mesoclimate and its deep, alluvial-fan soils foster grapes with complex flavors and exquisite balance. Located in the Oakville American Viticultural Area (AVA), it is one of California’s finest sites for Cabernet Sauvignon. Our grapes come from the Beckstoffer Vineyard, a section of To Kalon that is trained to bilateral cordon with vertical shoot positioning. Clusters are positioned for optimum sun exposure to develop fully ripe, lush flavors, which then turn into a myriad of complex fruit, spice and floral notes during winemaking.
The persistently cool 2011 vintage decreased yields in Napa Valley, but the remaining grapes ripened slowly, achieving bright, elegant, flavors. For the second consecutive year, Napa Valley’s harvest was one of the latest on record. A wet winter and spring continued into mid-June, causing shatter during bloom and reducing the crop. While the steadily cool temperatures made us anxious and gave us gray hair, this wine—with its depth of flavor and ripe, muscular tannins—that this temperamental vintage produced many exceptional wines.
To achieve a wine of great elegance while capturing the intense To Kalon flavors, we fermented in new French oak barrels to soften and integrate the bold tannins. The balance of the grapes was cold soaked for gentle extraction and fermented in stainless steel tanks. Following extended maceration and pressing, the wine completed malolactic fermentation in barrels to round the acidity. Four rackings naturally clarified the wine, as warm oak spices married with the opulent, dark-fruit expression. We bottled the wine without fining.
