With power and concentration, our 2012 Beckstoffer To Kalon Cabernet Sauvignon explodes with aromas and flavors that speak to the world-renowned To Kalon Vineyard. This wine exhibits a dense core of crème de cassis, blackberry, black cherry and dark plum, with layer upon layer of bittersweet chocolate, rum raisin, forest loam, graphite, leather, coffee bean and black olive. Beautifully integrated candied pecan, caramel and clove notes from new French oak barrels permeate the aromas and persist through the broad, dark-fruit finish. Still tightly wound, its muscular tannin structure promises even greater complexity with bottle aging. From a classic Napa Valley vintage, this limited bottling exemplifies impeccably balanced intensity and elegance as it captures its sense of place—To Kalon Vineyard.
To Kalon Vineyard was first planted in 1868 by viticulture pioneer Hamilton W. Crabb. The vineyard’s angle of sun exposure, its mesoclimate and its deep, alluvial-fan soils foster grapes with complex flavors and exquisite balance. Located in the Oakville American Viticultural Area (AVA), it is one of California’s finest sites for Cabernet Sauvignon. Our grapes come from the Beckstoffer Vineyard, a section of To Kalon that is trained to bilateral cordon with vertical shoot positioning. Clusters are positioned for optimum sun exposure to develop fully ripe, lush flavors, which then turn into a myriad of complex fruit, spice and floral notes during winemaking.
The relaxed, high-quality 2012 harvest was a winemaker’s dream. The ideal growing season—well-timed rains, no frost during budbreak, and perfect weather for bloom, berry-set and ripening—was textbook Napa Valley. Long stretches of sunny days coupled with foggy nights gave our 2012 wines exceptionally rich, expressive flavors and impeccable balance. We had no weather pressures, from either pending rains or excessive heat, to rush the harvest. Instead, we had the luxury of waiting until the grapes reached absolutely perfect maturity.
We hand sorted the grapes first in the vineyard, as we picked them at dawn, and then again at the winery for optimum quality. We cold soaked the must for gentle extraction and fermented it in stainless steel tanks. Following extended maceration and pressing, the wine completed malolactic fermentation in barrels to round the acidity. Four rackings naturally clarified the wine, as caramel from barrel aging married with the opulent, dark-fruit expression. Bottled without fining.
